Description

When I arrived in Puglia I discovered the gangmaster system – conditions were inhuman – they were ghettos that were like concentration camps,” he said. The file accuses Italian company owner Giuseppe Mariano and Sudanese gangmaster Mohammed Elsalih of manslaughter. The preliminary investigation has now concluded, and a judge will decide whether the case should go to trial.

The gangmaster or “caporalato” system is rife across the Italian agricultural sector where migrants – both legal and illegal – are organised into informal labour groups that are hired by Italian landowners to harvest their crops.

But in this case there was also manslaughter. That guy would not have died if there had been a doctor’s visit. The violation of the safety provisions on the job was flagrant.” Preheat the oven to 200C/400F/gas mark 6. Oil an ovenproof dish. Lie the fish in side by side. Season on both sides. Cover the fish with tomato sauce, drizzle over the rest of the oil. Place in the oven and bake for about 15 minutes, until the fish is cooked. These tomatoes came out of the can a vivid red color—exactly what you want for making marinara sauce or pizza sauce. The Alessi tomatoes were a bit softer than other options we tried, but for sauces where you really want the tomato to break down and melt into the mixture, that’s ideal. Additionally, these tomatoes weren’t oversweet—another great feature for cooked sauces.

After years of campaigning and organising a mass strike against the gangmasters, a strengthened law outlawing the caporalato system came into effect last year. In fact, the flavor of these tomatoes was so good, you could use them in any recipe where tomatoes are the star. These Hunt’s tomatoes will shine. The interests of these fields are linked with the interests of the politicians and people who own the most important companies in Italy,” said Valeria Sallustio, former president of Finis Terrae, an Italian NGO that worked closely with the workers in Nardó. These tomatoes were exactly what our team wanted of San Marzano tomatoes: sweet without that bracing acidity. While canned, these tomatoes were still plump and juicy. While workers make an average of €30 a day in the Puglia region, they can expect to lose up to half of that just to pay for food, transport, water and a cut to their gangmaster.

If you’re making chili, minestrone or other hearty soups, odds are the recipe will call for a can or two of tomatoes. While many recipes will suggest stewed or diced tomatoes, our Test Kitchen says substitute in a can of San Marzano tomatoes—particularly Mutti Pomodoro San Marzano. All you have to do is dice the tomatoes to the right size and consistency. In our quest for perfection, Joe sacrificed four tins from his precious collection. Dino chaperoned two tinned and two jarred tomatoes. I brought the rest, a mix of tinned tomatoes from online delicatessens and supermarkets. Napolina, Waitrose own brand, Heinz, Mr Organic and La Tarantella, all of which can be found in high-street grocers, didn’t score badly but paled in taste beside brands imported from Italy. In general, the standard was higher than we expected, although Ocado’s unpleasant own-brand offering was dubbed “a crime against humanity” by Joe. Joe’s years of tomato tasting had taught him “not to be deceived by trophies, baubles and badges that make them look impressive, when they don’t actually taste so good”. He was inspired. “I’m going to start eating my collection and experimenting,” he proclaimed. The welfare of all people who work in our supply chains is of key importance to us, and BRC members will investigate any allegations of malpractice.” Tarantella: (400g) 85p These have a nice, deep, red colour. Joe and Dino declared them “just above average”. Available from Morrisons. Score: 3/10 To find the best of the best canned tomatoes, our Test Kitchen experts sampled nine San Marzano tomato brands. The tomatoes were tasted blindly and our prep crew also sliced, diced and pureed these tomatoes to see how they were to work with. All the while our pros kept these criteria in mind:

Heat 2 tbsp oil in a shallow pan over a medium heat. Add the onions and cook for 15 minutes, stirring now and then, until soft and lightly browned. Add the garlic and chilli. Stir for a few minutes, add the vinegar and leave to evaporate. Add the tomatoes, water, herbs, salt and sugar, bring to the boil. Lower the heat and leave to simmer, uncovered for 30 minutes to 1 hour, stirring occasionally, until it has almost reduced to a paste. The companies named in the file are not liable and stress the extent to which they encourage their suppliers to treat their workers ethically. Having worked in the food and restaurant industry for a decade, I can tell you that no two brands of canned tomatoes are exactly alike. Some tomatoes are velvety, brilliantly red, and full of flavor, while others are tough, underripe, and insipid. To date, we’ve assessed over 25 different cans of whole peeled tomatoes—some with our colleagues at NYT Cooking—to find the best. Flavor: How did the tomatoes taste? Did they taste fresh? Did they have that distinctive San Marzano flavor: sweet and not too acidic? Are there any other additional tastes coming through—good or bad?In all our tests, we tasted all of the tomatoes twice: once straight out of the can and heated through, and then again made into Marcella Hazan’s Tomato Sauce. In doing so, we’ve encountered a huge range—from tomatoes that were sweet enough to eat straight out of the can to ones that carried a whiff of dead animal. We were also surprised to learn that price didn’t always correspond to quality. These tomatoes had a very rich red color—essential for homemade tomato soup. Flavor-wise, testers remarked on how Mutti tomatoes walked the line between acidic and savory, and that’s exactly the quality you’re looking for in the tomatoes in your soups and chilis. A touch of acid plays well with other veggies in soups like minestrone, while the savory notes are really what makes homemade chili so homey. Appearance: How do the tomatoes look coming out of the can? Are they a rich red color? More orange? Are the tomatoes intact and whole or are they squished and broken apart? A spokesman for Conserve Italia, which produces the Cirio brand of tinned tomatoes that is sold by Tesco, said it requires all its suppliers agree to “respect” their workers and the company’s ethical code, and that the company cut ties with the supplier involved after they were made aware of Muhammed’s death. Zoe Maddison, spokesperson for the British Retail Consortium (BRC), which represents Tesco and Sainsbury’s among other major UK supermarkets, said: “This is a tragic case and we expect the Italian authorities to carry out a full investigation.

San Marzano and DOP: These terms are sometimes conflated. San Marzano tomatoes, which are prized for their mellow flavor, can be grown anywhere. Certain San Marzano tomatoes are certified DOP, which guarantees that they’ve been grown, processed, and canned in a specific geographical zone in Italy. As our tests show, neither term is necessarily an indicator of flavor or quality. When it comes to tomatoes, quality is important. We’ve used our fair share of tinned tomato products over the years and come to realise that not all tins of tomatoes are created equal – there are massive differences in quality and flavour depending where you buy and how much you’re willing to spend. Good tomato products should have a nice deep red colour, a pure tomato flavour, a freshness and a sweetness. That’s not always easy to find, but for our money, Mutti tomato products have always delivered on all fronts. Tester after tester remarked that these Italian-style tomatoes from Cento tasted like a satisfying San Marzano tomato plus a little something extra. Of course, our Test Kitchen pros were right on the money: These tomatoes are real San Marzanos canned with a touch of salt and basil.Take off the heat, fish out the herbs, stir in the butter, and season to taste. Blend until smooth. Stir in the capers and chopped basil. We know in the south of Italy there are some situations that are not in line but we can’t do the work – it’s not our responsibility to verify what happens in the region but we do ask our suppliers to respect human rights,” he said. “We don’t pay less than the normal price.”
